Ingredients

  • 2 tbsp butter (unsalted)
  • 1 cup carrots (peeled and sliced into circles)
  • 1 cup celery (sliced)
  • 3/4 cup onions (chopped)
  • 1 tbsp ginger (chopped)
  • 1 tbsp garlic (chopped)
  • 7 1/2 cups chicken broth
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • salt and pepper (to taste)
  • egg noodles (12-ounce)
  • 1 1/2 cups chicken (shredded)
  • 2 tbsp parsely (chopped)
  • 1 tbsp parsely (for garnish)

Instructions

  1. Heat a large soup pot over medium-high heat and melt butter.

  2. Add in the celery, onions and carrots. Then, saute everything until the veggies become slightly tender.

  3. Add in the garlic and ginger. Then, saute for 1-2 minutes. Watch closely and make sure not to burn them!

  4. Add oregano, thyme, broth, salt, and pepper. Then, bring to a boil.

  5. Let it sit and cook for 5 minutes.

  6. Add in the egg noodles and let everything cook for 10 minutes, or until the noodles become soft.

  7. Finally, add in the chicken and parsley and cook for another 3 minutes.

  8. Check the flavor for taste. Add additional seasoning and spices.

  9. Garnish with some fresh parsley and enjoy.

Recipe Notes

If you would like to have more broth in your soup then add more water or broth and cook for an additional 4-5 minutes.
