Ingredients

  • 1 head romaine lettuce - rinsed (dried and chopped)
  • 1 cucumber (sliced)
  • 1 red onion (thinly sliced)
  • 1 cup feta cheese (crumbled)
  • 1 can pitted black olives (6-ounce)
  • 6 tbsp olive oil
  • 3 tsp red wine vinegar
  • 2 large tomatoes (chopped)
  • 1 green bell pepper (chopped)
  • 1 red bell pepper (chopped)
  • 1 tsp dried oregano
  • 1 lemon (juiced)
  • ground black pepper (to taste)

Instructions

  1. Combine olives, onion, bell peppers, Romaine lettuce, tomatoes, cucumber, and cheese in a large sized salad bowl.

  2. In a separate bowl, whisk together olive oil, red wine vinegar, oregano, lemon juice, and black pepper.

  3. Pour dressing over salad, toss and serve.
