- 1 head romaine lettuce - rinsed (dried and chopped)
- 1 cucumber (sliced)
- 1 red onion (thinly sliced)
- 1 cup feta cheese (crumbled)
- 1 can pitted black olives (6-ounce)
- 6 tbsp olive oil
- 3 tsp red wine vinegar
- 2 large tomatoes (chopped)
- 1 green bell pepper (chopped)
- 1 red bell pepper (chopped)
- 1 tsp dried oregano
- 1 lemon (juiced)
- ground black pepper (to taste)
Combine olives, onion, bell peppers, Romaine lettuce, tomatoes, cucumber, and cheese in a large sized salad bowl.
In a separate bowl, whisk together olive oil, red wine vinegar, oregano, lemon juice, and black pepper.
Pour dressing over salad, toss and serve.
